Un arr\u00eat\u00e9 conjoint publi\u00e9 dans le dernier num\u00e9ro du Journal officiel, en date du 2 avril 2026, fixe d\u00e9sormais les taux d\u2019extraction de la semoule et de la farine, dans une optique clairement orient\u00e9e vers l\u2019am\u00e9lioration de la qualit\u00e9 nutritionnelle du pain.<\/strong><\/p>\n\n\n\n<p>Le texte, sign\u00e9 par les ministres de l\u2019Agriculture et du Commerce, red\u00e9finit les cat\u00e9gories de produits issus du bl\u00e9. Du c\u00f4t\u00e9 du bl\u00e9 dur, un seul type de semoule est d\u00e9sormais retenu, simplement d\u00e9sign\u00e9 comme \u00ab semoule \u00bb. Pour le bl\u00e9 tendre, deux vari\u00e9t\u00e9s de farine sont distingu\u00e9es : l\u2019une destin\u00e9e \u00e0 la fabrication du pain, l\u2019autre d\u00e9di\u00e9e au pain fin et \u00e0 la p\u00e2tisserie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-taux-d-extraction\">Les taux d\u2019extraction<\/h2>\n\n\n\n<p>Au-del\u00e0 de cette classification, l\u2019\u00e9l\u00e9ment central de la r\u00e9forme r\u00e9side dans les taux d\u2019extraction. La semoule issue du bl\u00e9 dur est fix\u00e9e \u00e0 70 %, tandis que la farine panifiable atteint un taux de 85 %. La farine destin\u00e9e aux pains fins et aux p\u00e2tisseries est, elle, limit\u00e9e \u00e0 71 %. Ces seuils ne sont pas anodins : ils traduisent une volont\u00e9 de conserver davantage d\u2019enveloppes du grain, riches en fibres, dans les produits finis.<\/p>\n\n\n\n<p>Cette orientation s\u2019inscrit dans une strat\u00e9gie plus large des autorit\u00e9s visant \u00e0 promouvoir un pain subventionn\u00e9 \u00e0 meilleure valeur nutritionnelle. Le d\u00e9put\u00e9 au Conseil national des r\u00e9gions et des districts, Marouane Zayen, a salu\u00e9 un un v\u00e9ritable point de d\u00e9part  pour la production de pain riche en fibres.
